This plush banana cake is finished with a sticky, caramel-like glaze, nodding to the filling in banoffee pie. Similarly to the pie, canned or jarred dulce de leche stands in for homemade caramel and provides a softly sweet, milky flavor that pairs well with the fruity cake. The speedy one-bowl batter uses a combination of oil, buttermilk and dulce de leche to keep the cake moist. Powdered sugar and milk transform more dulce de leche into a glossy glaze while an extra splash of vanilla and salt amplifies its flavor.
