Roasted Garlic Dip

This one is for the garlic lovers. Similar to the classic French Onion Dip, and just as irresistible, it uses sweet, caramelized roasted garlic cloves as its star flavor. The cloves are smashed into a paste, which is then incorporated into a tangy mix of sour cream and cream cheese. With the addition of fresh chives, it creates a deeply satisfying and surprisingly simple way to put your favorite potato chips to use. For a lighter texture, feel free to swap in Greek yogurt (or even mayonnaise) instead of cream cheese. Chopped dill or scallions can easily replace, or join, the chives for fresh variations. And if you are somehow lacking garlic, a sprinkle of toasted garlic chips or garlic oil on top of the dip would likely fill the void.
